Banana Cake Recipe

Banana Cake Ingredients:
235g Cap Kompang
175g butter
175g castor sugar
¾ tsp bicarbonate of soda
4 egg yolks
4 egg whites
1 cup well-mashed ripe bananas (add 1 tsp lemon juice when mashing)
1½ tbsp lemon juice
1 tsp grated lemon rind


  1. Grease and flour a 23 cm cake tin.
  2. Preheat oven at 170°C.
  3. Mix flour and bicarbonate of soda together.
  4. Beat butter and sugar till light and fluffy. Add egg yolks one at a time, beating well after each addition.
  5. Add mashed bananas into mixture and beat well. Gradually add in sifted flour.
  6. Beat egg white until stiff and stir into mixture. Add lemon juice and grated rind.
  7. Pour batter into prepared tin and bake for 45 to 55 minutes or until cake is cooked.
  8. Cool cake in the baking tin for 15 minutes before removing.
